Moroccan Tagine is the famous traditional Moroccan dish. It origins belong to Maghreb, especially Morocco. And this dish is famous also in Algeria and Tunisia, but studies shows that Tagine belong to Amazigh origins.
The word Tagine its the name of the pot where we cook and serve food. Tagine pot is made of clay, this pot allow you to cook food without losing their natural flavors.
Moroccan Tagine differ from city to another; there are many types of Tagine like: lamb tagine, chicken tagine, vegetable tagine, beef tagine, and lamb tagine with apricots, and many other types.
Here we gonna show you how to cook Moroccan chicken tagine step by step :
to cook tagine dish you need :
2 onion, 1 tomato, chicken, 2 carrots, 3 potatoes, fresh pepper, a glass full of fresh peas, garlic, fresh chervil.
small spoon of paprika, small spoon of ginger, quatre of spoon of pepper, small spoon of saffron, small spoon of salt, and two big spoons of oil.
Preparing method :
step 1 :
We take the tagine cooking and put circles of onion and tomato as it is clear in the image above .
step 2 :
We add chicken in the middle of the pot, after that we add some spices and keep other to the end, garlic, and charvil cut to small pieces .
step 3 :
We cut potatoes as it is clear in the image above, or as circles and surround them to cover the chicken .
step 4 :
We add carrots you can cut it as you want, and put it as it is clear in the image. After we add fresh pepper on the top, in addition to peas especiall in empty spaces .
step 5 :
We mix the spices that we saved in the previous steps with a glass of water, and add them to the tagine and cover it and put it on slow fire between 45 mins to 1h,30min deppend on the quality of meat .

Moroccan tagine differ from city to another, also from season to to another depend on the vetegables which are avaible at home. Also the pot is different some people use the pot made of clay, while others use a pot made of metal.
The method of cooking also differ. Some put circles of onions down the meat or chicken, and others put carrots under it. On the top of the meat you are free to put any vegetables you want. You can use meat, chicken, fish, beef, or lamp in addition to vegetables to cook your best tagine.
