Couscous is a famous traditional principal plate in Morocco and some other Arab countries. Couscous is a very old and inveterate plate that transfers from one generation to another. Also, it’s a lovely dish for all ages.
Moroccan couscous is served on occasions and celebrations, it is a habit to serve it as lunch Friday.
Couscous is a small grain made of wheat which Steamed and watered with broth. Couscous is considered a healthy food, that is rich in carbohydrates which gives people energy all day.
1- Couscous with onion and raisin
Ingredients:
- 7 onions
- 1/4 kg raisin
- 1kg meat
- 1kg couscous
- Allspice( salt, black pepper, saffron, ginger, butter)
- 3 cups of Chickpeas soaked in water overnight
- parsley
- 1 tomato
- olive oil
The method of preparing:
To prepare meat and broth, we put meat and 1onion, 1 tomato cut it into small pieces with olive oil, salt on medium fire, and mix them from while to another.
We add pepper, ginger, saffron, and wait for a while and add water then chickpeas, parsley, and butter.
In another pot, we put pieces of onion with a little oil, and salt on fire, and mix them until you notice that the quantity of onion is decreased.
We put raisins in the water to become softer and take some broth from the pot we made meat in, and we add it to the onion in the other put and add raisin too and leave till becomes ready. We add to it a small cup of sugar, and a small spoon of cinnamon, and leave it to become mixed until the water disappears.
We put the couscous in a big pot and add to it a small cup of water and mix it very well, then put it on the steam, for about half an hour and put it in the same put and add to it water and salt and put it on the steam again for another half an hour then put it the serving pot and put on it meat and broth and onion that you have prepare before.
2-Couscous with milk:
Ingredients:
- ¼ kg of meat or chicken what you prefer
- One onion
- 4 carrots
- 2 potatoes
- 2 green squash
- A small piece of red gourd about 250g or less
- A cup of chickpeas soaked in water overnight
- Parsley
- 1/2L milk
- 1/2kg couscous
- Allspice( salt, black pepper, saffron, ginger,oil, paprika)
The method of preparing:
In a pot we put meat and all spices and oil, chickpeas, and onion and mix them for a while then we add carrots and green squash and mix all for minutes add parsley and water about 1L and leave them for 1 hour, then add red gourd and potatoes, and leave them half an hour, when it is ready we add milk and leave it boils for 10 minutes, add serve it.

3-Couscous with tomato sauce:
It’s the same method and ingredients of couscous with milk the only different thing is we don’t add milk here but we change it with 2 or 3 ground tomatoes that we add in the first step with meat.
